Jean and Johnny's Apple Pie

In Fall 2022 The Loop sponsored an apple pie baking contest at the Tehachapi Apple Festival and the winner, Jean Chapman, was gracious enough to share their award-winning recipe with our readers. Enjoy.
Ingredients & Directions
Pie Crust Dough:
• 4 cups flour • 1/3 cup butter • 1 tsp salt • 1 cup lard • 1/2 cup ice water
Blend butter, lard, flour, salt until it forms pea-sized chunks. Add the ice water.
Chill dough in refrigerator. (Cut in half.)
Filling: • 8 Granny Smith apples, peal and core • 1 lemon, juiced • zest of 1/2 lemon
• 1.5 cups brown sugar • 3 tbsp flour • 1.5 tsp cinnamon • 1/2 tsp nutmeg
Mix in bowl and let set for 30 minutes.
Putting The Pie Together: • Set aside 1/4 cup cold butter cut into pieces
Roll out 1/2 of the dough for bottom crust.
Fill the pie crust with the apple mixture. Add the butter pieces to the top of the filling.
Roll out the rest of the dough and cover the pie. Crimp edges.
Bake at 450 degrees for 10 minutes.
Turn oven down to 350 degrees and bake for 50 minutes.
