From before she even opened Healthy Hippie Trading Co. in Old Town, owner Sarah Rose knew she wanted to also have a vegan Cafe.

"When remodeling the building prior to move in, we set aside an area behind an already constructed wall to be our kitchen. We purchased some used kitchen equipment and hired an architect to draw up the plans," she said. "What I hadn't counted on was issues regarding the septic size. Basically what we needed to add, in terms of sinks, along with what already existed, exceeded the capacity of the septic according to the county."

This news was a major setback for Sarah.

"When I found out, I took a week off to pray and refocus. Giving up was never an option. I didn't know what the solution was going to look like. I just knew that I wasn't giving up," she said.

Her never quit attitude paid off.

"Two months later I got a phone call giving me two options for my cafe. One of them was taking over the unit directly next to me. Next thing I knew, I was signing a three year lease!" Sarah laughs.

There's still a lot of work to be done before the cafe opens.

"I really am at the mercy of contractors, inspections and money," she explains. "We're doing everything with cash so that means it will take longer, but it's important to me to be debt free when we open the doors."

Healthy Hippie Trading Co. is located at 20418 Brian Way, across from Kelley's Chuckwagon Café in Old Town. Hours are Monday-Saturday 10 a.m. to 5 p.m., Sunday 10 a.m. to 2 p.m.
